Had a hankering for some MEAT, and then remembered hearing about this place. In an industrial area between Westlake Village Blvd and Hampshire. Parking is easy. Walked into the clean, open space that had a gorgeous display case showing a wide assortment of meat and seafood - all perfectly laid out. I had no idea what I was looking for but was willing to let Mike, who offered to help me, be my guide. I told him I was new to this "venture" and I normally ate only Prime Filet - anything else was just too chewy for me. He suggested starting with their Australian Wagyu Red Ribeye Steak. He said the marbling was a little more than a Prime Filet, so the meat would be as or more tender. There were some excellent cuts in the case. They were all at or just over a pound. I had Japanese A5 Wagyu at a restaurant previously and could only eat about 3 of the 4 oz served. Insanely rich. Mike assured me that the Australian cut was not the same, so I'd be able to eat more. Great! Let's do it! When I asked how to cook it, like sautéing it in butter, he said he prefers beef tallow. I did not know this was a thing. And he processes his tallow there! There were several chunks of tallow in the freezer, so I snagged one of those as well. Pop it in a Tupperware container and it will last a year in the fridge. What was eye opening is that when I do a Prime Rib Roast on the rotisserie, I'll use the drippings to make Yorkshire Pudding. And that's the beef tallow, though more refined. The smell was unmistakeable when I added the tallow to the hot pan. So this means I can now make perfect Yorkshire Pudding Popovers anytime!! I'm like a kid in a candy store! Used a 12" cast iron pan for the steak. A little bit of tallow goes a long way!!! The steak was insane!!!! And now I'm ready to take it up a notch. Mike, what am I making for dinner tomorrow night? I'll see you in the afternoon!

They are located in a business park in Westlake Village. If you come in on a Saturday, the parking lot is pretty much empty, but they are open and also open on Sunday by appointment. Walking in, you are presented with the dry age refrigerators. There's a meat case to the right of it and Mike and his crew are there to help you. Most of their meats are of the Wagyu kind. They have some Australian and Japanese options. Mike was so helpful and easy to talk to. He gave me some great tips as he has a love for quality meat and bbq'ing. You can definitely tell how passionate he is when talking to him. I will definitely be coming back here when I need top quality meat. I just have to get more comfortable with my offset before spending top dollar for their wagyu.

I love supporting small businesses. This butcher shop has the best selection of top quality meats IMO. They primarily carry Australian Wagyu cuts, and they also dry age in house. I was also pleasantly surprised that they offer seafood... It's honestly a carnivore's paradise!! Service is excellent. Everyone is super helpful, and they even offer ice packs if you have a far way to travel. Ambiance is spotless. This is the perfect place to visit, especially during grilling season!! I can't wait to come back!
